I have heard of some lasting up to two weeks... Even if this is the standard one week experiment, you would still be very capable of dying of dehydration in that period, especially with your extremely small size and dependency on water to respirate. After all, you have gills now, as a crab - and even though land crab species are adapted to lower levels of water, their gills must still be moist for them to work.
